Are you looking for a sweet, healthy snack for on-the-go? Give these raspberry bites a try! Packed with healthy fats and easy to take with you. Perfect for a tasty and nutritious energy boost!

Ingredients

  • 150g rolled oats

  • 150g shredded coconut

  • 240g fresh or frozen raspberries

  • 18 Medjool dates, pitted (approximately 330g of pitted Medjool dates)

  • 1 teaspoon vanilla paste or extract

  • 2 tablespoons chia seeds

  • Pinch of salt

  • Coconut oil

  • (optional)

  • Additional coconut or cocoa powder for rolling

Directions

  • Place all the ingredients in a food processor and blend until the mixture starts to crumble and clump together. This may take a few minutes, and you might need to scrape down the sides of the food processor a couple of times.
  • Roll the mixture into firm balls of your desired size. You can choose to roll the balls in cocoa powder or extra shredded coconut or drizzle them with melted dark chocolate if you like.
  • Allow the raspberry bites to cool until you're ready to serve.

  • Tip! If you're using frozen raspberries, allow them to thaw slightly at room temperature before incorporating them into the mixture. This will prevent the coconut oil from solidifying and making it harder to blend.
