It's less work than it appears, and the result is delicious. I often bake two at a time, one for now and one for later. Ingredients
Dry Ingrediënts
2 cups spelt flour
1 cup rolled oats
1 tablespoon baking powder
1 tablespoon cinnamon
1 teaspoon ground cardamom
¼ teaspoon sea salt
Wet ingredients:
½ cup melted coconut oil
½ cup pure maple syrup
½ cup plant-based milk
2 teaspoons pure vanilla extract
Additions:
1 cup mixed fresh berries
1 cup finely chopped baby spinach
1 cup finely grated carrots
1 medium apple, grated
¼ cup soaked raisins
¼ cup dried cranberries
¼ cup mixed sunflower
and pumpkin seeds
¼ cup finely chopped dried apricots

Directions
- Grease a 5 x 9-inch loaf pan. Preheat the oven to 190°C (375°F).
- Whisk the dry ingredients together in a large mixing bowl. In a separate bowl, stir together the wet ingredients and add them to the dry ingredients until just combined. DO NOT MIX TOO MUCH.
- Fold in the remaining ingredients (the additions).
- Place the batter in the loaf pan and bake for 45 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then remove the bread from the tin to cool completely on a rack.
- Make sure that the fruits do not all come together in one place in the baking tin. The lack of dough can cause a hole in your bread. And that makes cutting a lot more difficult.
